Adzuki bean Soup
Sauté onion, and celery, and garlic first for more flavor.
Ingredients

8 ounces dry adzuki beans
-
6 cups water.
-
1 large onion, finely chopped
-
4 stalks celery, thinly sliced
-
1 clove garlic finely minced
-
2 tablespoons fresh herbs finely chopped ( suggestions:
rosemary, oregano, parsley, chives, basil, or any
combination of your choice)
-
1 bay leaf
-
1 teaspoon allspice that is ground up
-
3 cloves
-
We don't us salt but if you wish to use salt, we would
suggest 2 teaspoons salt at the most.

3 teaspoons black pepper
Directions:
Sauté onion, and celery, and
garlic first for more flavor.
1. Wash the adzuki beans well in several changes of water, then
drain.
2.
In a large
pot, bring the 6 cups water to a boil.
3.
Add all
ingredients and boil rapidly for 15 minutes.
4.
Reduce heat and simmer, covered, for 2 hours
