Millet Mash

This is one of our favorite recipes and it is remarkably easy to make.   

Ingredients

 

1 Cup millet

1 small head cauliflower

2 1/2 cups water

Pinch of salt

1/4 cup fresh parsley, chopped

 

Directions:

 

Wash the millet and drain well. Add a pinch of salt to the water and bring to a boil. Thinly slice the cauliflower, and then add to the water along with the millet. Bring to a boil and then reduce heat and simmer for 20 minutes. Remove from heat and mash well with a potato masher. Fold in the parsley just before serving.

 

Wonderful healthy dish.
