Red Lentil Salad

 

Item needed:

1 cup red lentils

1 zucchini                                                             
4 cherry tomatoes
1 half red pepper
2 tbs parsley
1 half cup plain yogurt
2 tbs mayo (Vegan Mayo can be used as well)

1 half teaspoon curry powder

1/2 teaspoon of Brown sugar

salt to taste
 
 
Boil red lentils in 4 cups water for 7-8 minutes, drain in cold water.
 
Cut zucchini in very small chunks, dice tomatoes, and red pepper.
 
Mix yogurt, mayo and currry powder together.
 
Mix sauce with lentils add parsley and salt to taste.
